While at the ag school at Cornell, I recall various studies relating to the
production of various bean crops for best matching protein and land use
requirements.
Much of that info is open to the public for research purposes. You might want
to check out some of their many sites and links on these sustainable ag
projects. ie.http://www.cce.cornell.edu/initiatives/afs/managing_change.cfm.
Be aware:
Like most other large universities, I do recall Cornell has ties to USAID
I do recall there has been past  debate over Cornell Medical trials in haiti
