Teaching the Haitian way
During the 1950s, Liliane Nerette Louis, who now lives in Miami, taught
elementary school in Haiti. She also taught cooking classes out of her
mother's kitchen, which, she says, was her true passion.
Since coming to the United States in 1964, she's continued to hold cooking
classes. And six lucky people per year get a chance to spend one night a
month in her kitchen and dining room. They not only learn Haitian cooking
but also the etiquette of entertaining.
"It's not like goats going to the prairie," says Louis, who has a way with
words. She's also a professional storyteller and a doctoral candidate at
Florida International University planning to do an independent study on
memories of Haitian cuisine.
Her yearlong course is free. "I do it as a service to the community," she
says.
She already has a wait list for 2004. But from 9 a.m. to 1 p.m. May 10,
she'll be offering a course on the Creole French Connection for the
community education department at the Kendall campus of Miami-Dade Community
College (11011 SW 104th St., Miami). And it's open to anyone who
preregisters by Saturday. The course costs $55 and will be repeated at the
same time Aug. 2.
She'll also be offering Haitian Home Cooking, a two-session course from 9
a.m. to noon on May 15 and 23, and again on July 23 and 30. The cost for
