Ingredients
1 egg
1 grated malanga
hot pepper (optional)
1 tablespoon salt
1 small chopped onion
2 garlic cloves
oil
Directions
1. Mix all the ingredients in the bowl and make a batter
2. Pour the batter by spoonfuls into pan of heated oil or
deep fryer and cook until golden brown on both sides

Cooking time: 20 min
Serves: 6

MARINADE

Ingredients
1 egg yolk
1 cup of cooked smoked herring or codfish
2 egg whites
1 tbsp salt
2 scallions
2 tbsp parsley
1 teaspoon lime juice
1 tsp hot sauce
1 cup all-purpose flour
1 tablespoon baking powder
2 ½ cups water
¼ cup oil
Directions
1. Combine salt, scallion, parsley, lime juice, and hot
sauce and set aside.
2. Place flour with baking powder into a bowl.
3. Mix all the ingredients in the bowl and make a batter
4. Pour the batter by spoonfuls into pan of heated oil or
deep fryer and cook until golden brown on both sides

Cooking time: 20 min

BEYEN with Fried Bananas

Ingredients
3 Very ripe bananas
1 tbsp flour
½ tsp cinnamon powder
½ tsp vanilla extract
1 tbsp sugar
1/8 tsp baking soda
sugar for topping (optional)
Directions
1. Mix bananas, flour, sugar, vanilla and cinnamon in
medium size bowl
2. Place spoonful of batter in very hot oil and fry until
golden brown
3. Sprinkle sugar

Cooking time: 30 minutes
Serves: 8

BEAN SAUCE (Sos pwa)

Ingredients
2 cups dried red beans, rinsed
3 scallions
1 tbsp parsley
2 shallots
2 quarts water
1 cup cubed ham
2 chopped cloves of garlic
Salt, black, and hot pepper to taste
Directions
1. Combine scallions, parsley, shallots, and hot peppers to
form a paste
2. Heat oil medium heat and add seasoning paste, beans, and
scallions
3. Add water, ham hock, parsley, and cubed ham and bring to
boiling
4. Cover and simmer for 2 hours, or until beans are tender
5. Remove ham hock. Process beans and juice in an electric
blender or force through a strainer
6. Return sauce to low heat and season to taste

Cooking time: 2 hours
Serves: 8

Chicken with gravy (poul ak sos)

Ingredients
1 lb chicken
1 tbsp lemon juice
1 tbsp of vinegar
2 crushed garlic cloves
1 tbsp parsley
1 tbsp thyme
2 tbsp adobo or seasoned salt
2 tbsp oil
Sauce
Directions
1. Clean chicken with lemon juice or vinegar and rinse with
hot water
2. Season chicken with parsley, thyme, garlic, and adobe or
preferred spices
3. Marinate over night or 3-4 hours
4. Boil chicken in a pot for 20 minutes
5. Prepare Sauce
6. Brown chicken in pan with 2 tbsp oil
7. Simmer chicken in sauce or 10- 15 minutes

Cooking time: 40 minutes
Serves: 6
