I picked up a nice little cookbook last year when I was in Haiti.  It's from 
the Mission Baptiste up in Fermathe, more commonly known as Kay Wallas.  It's 
called "Mountain Maid Best Made: A Complete Guide to Haitian Cooking 
Including Creole, French, Modern, Famous, and Fun Recipes".  I believe The 
Mountain Maid Self Help project is online, but I don't know the address.  
Perhaps someone else does?
