I'm not sure what kind of Haitian mushrooms grow in cow manure, but
commercial grown mushrooms in the US, at least in Ohio, are grown in
horse manure.  As a teenager in Ohio I worked in some mushroom pits and
my job was to turn over the piles of horse manure and spread it in the
growing trays in the pits.
